Gluten Free Brownies Recipe

My husband has a major sweet tooth, but has been eating gluten free lately. I haven’t been able to load up on cookies when they go on sale anymore and gluten free products are very expensive. Instead I like to whip up a batch of gluten free treats in the evening once the girls are in bed. Making my own baking mixes makes it easier but still affordable.

Gluten Free Brownie Mix

1 cup sugar
1/3 cup rice flour
1/3 cup cocoa
3 tablespoons potato starch
1/4 teaspoon baking powder
1/4 teaspoon salt

What else you’ll need

1/2 cup butter
2 eggs
1 tablespoon vanilla

Blend butter, eggs and vanilla in a mixing bowl and then stir in mix and stir until smooth. In a greased baking pan bake at 350 degrees Fahrenheit for 20-30 minutes until edges are crispy and center is cooked through. Fully cool before serving (something we rarely have patience for, but they will crumble otherwise).

If you want to make a large batch I would advise against putting it all in one container as gluten free baking is very precise and contents may settle. Instead I would suggest making several mixes in separate ziploc bags or tupperwear containers for future use.

These were amazing and disappeared quickly. They are very inexpensive to make, and very easy. They were just as good as regular brownies.
